Syndi's French Silk Pie

  • Piecrust
  • ΒΌ C. Butter
  • 3 oz. unsweetened baking chocolate
  • 1 C. sugar
  • 3 T. cornstarch
  • 3 larch eggs
  • 1 t. vanilla
  • 1 C. heavy whipping cream
  • Cool Whip
  • Medium CHILLED bowl
  1. Melt butter and chocolate in a 2-quart sauce pan over low heat stirring occasionally. Remove from heat when completely melted. Mix sugar and cornstarch together then add to melted chocolate mixture.
  2. Beat eggs in small bowl with electric mixer on medium speed until thick and lemon colored. Stir in chocolate mixture and cook over medium heat for 5 minutes stirring constantly until thick and glossy. Stir in vanilla. Cool this mixture for 10 minutes stirring occasionally
  3. Beat whipping cream in medium chilled bowl with electric mixer o high speed until stiff
  4. Fold chocolate mixture into heavy whipped cream then spread in baked piecrust. Cover and refrigerate for 4 hours or until set. Garnish with Whipped cream and chocolate shavings if desired.
