Bell Pepper Soup

Ingredients
  • 1 lbs Ground Beef
  • 1 Large Onion, Chopped
  • 1 Tbsp Minced Garlic
  • 1 Can Fire Roasted Tomatoes
  • 1 Can Tomato Soup
  • 1 12 Oz Can V8
  • 2 Green Peppers, Chopped
  • 2 Red, Orange, or Yellow Peppers, Chopped
  • ½-2 Tbsp Sugar (altered to your preference)
  • 1 Cup Minute Rice
  • 1 Sazon
  • Other Seasonings as desired (I use garlic pepper)
Instructions
  1. Brown beef, onion and garlic
  2. Rinse and drain
  3. Add 2 soup cans of water and all other ingredients, except rice
  4. Cook at a slow boil until peppers are tender
  5. Add rice and cook until tender (10-15 minutes)
