Baked Oatmeal- Maple Pecan

This is a great make ahead breakfast option that is full of wholesome oats. If you’re feeling fancy serve for brunch.
  • 2 cups Organic Rolled Oats
  • 0.5 cup Organic Chopped Pecans
  • 0.25 cup Pure Maple Syrup
  • 1 tsp. Aluminum-free Baking Powder
  • 1.5 tsp Ground Cinnamon
  • 0.5 tsp Sea Salt
  • 2 cups Unsweetened Nut Milk (Cashew, Almond, etc.)
  • 1 Flax Egg (1 TBSP Ground Flax, 2 TBSP water)
  • 2 tsp. Pure Vanilla Extract
  • 2 Ripe Bananas Sliced
  • Parchment Paper
  1. Preheat the over to 375°F
  2. Line 8” square baking dish with Parchment Paper
  3. In a small bowl prepare Flax Egg by mixing 1 TBSP Ground Flax and 2 TBSP water. Then set to the side.
  4. In a large bowl mix together the dry ingredients: oats, ¼ cup pecans, baking powder, cinnamon, and salt.
  5. Add in the wet ingredients: milk, maple syrup, flax egg, vanilla and sliced bananas. Stir well until combined.
  6. Slowly pour mixture into the prepared baking dish.
  7. Sprinkle the remaining pecans (1/4 cup) on the top.
  8. Back for 35-45 minutes. Once the top is golden, remove from the oven and let cool for a few minutes. Serve or store.
  9. Optional: If you want to sweeter, feel free to drizzle each serving with maple syrup.
