Applesauce Pancakes with Cinnamon Syrup

  • Pancake Batter:
  • 1 Egg
  • 1 Tablespoon Sugar
  • 1 Tablespoon Softened Butter
  • ¼ Cup of Applesauce
  • 1 Cup Evaporated Milk
  • 1 Cup of Bisquick
  • Cinnamon Syrup:
  • 1 Cup Light Corn Syrup
  • 2 Cups of Sugar
  • ½ Cup Water
  • 2 Teaspoons Cinnamon
  • 1 Cup Evaporated Milk
  1. Pancake Batter:
  2. Mix all ingredients just until mixture is moistened.
  3. Cinnamon Syrup:
  4. Mix cinnamon, syrup and water. Bring this mixture to a boil and cook for two minutes. Cool for five minutes and add one cup of evaporated milk. Serve warm.
  5. Refrigerate leftover syrup because it will last quite a long period of time. Be sure when you serve it again that you just warm it and not boil it as it will separate.
